Birria wings with consomme

tomatoes

Birria spice mix

Preparation:

Wash and drain the chicken wings. Season with birria spice mix, salt and pepper.
Dredge the seasoned chicken wings in flour to create a crispy crust.
Heat the oil in a pot or deep fryer and fry the chicken wings until golden brown and crispy. Place them on a tray lined with paper towels to drain off excess fat.
In the meantime, prepare the consommé. In a separate pot, bring beef or chicken broth, tomatoes, onions, garlic and birria spice mix to a boil. Let the mixture simmer until the flavors are well blended, about 15-20 minutes.
Use an immersion blender to puree the soup until smooth. You can then strain it through a sieve to remove any residue or leave it as is, depending on your taste.
Season the consomé with salt and pepper and serve it hot.
Arrange the birria wings on a plate and garnish with fresh coriander leaves. Serve with lime wedges for drizzle.
